Between about day 5 and day 21, coffee reaches its sweet spot. This is when flavors are most balanced, aromas are strongest, and the overall experience is at its best.
After that window, coffee doesn't suddenly go bad - but it does begin to fade. The complexity softens, the aroma dulls, and the cup becomes flatter over time.
This is where most store-bought coffee falls short. By the time it reaches your shelf, it's often already past its peak.
